Red corn

Rich in anthocyanins, cyanidin 3-glucoside identifiable (C3G) and in quantities less pelargonidin 3-glucoside (Pg3G). Several studies in animal models have shown that a diet enriched with anthocyanins of red corn is able to reduce the damage from myocardial infarction, to increase the blood levels of omega-3 (molecules known for the cardioprotective properties), to reduce the 'accumulation of abdominal fat and preventing obesity in the case of high-calorie diet and delay the onset of diabetic nephropathy. The seed flour, corn has a red antioxidant capacity about 2-3 times greater than the traditional yellow corn meal and in some cases presents a level of contamination by mycotoxins significantly lower than the yellow corn.
The Italian red corn comes from a natural cross made from ancient varieties of South American corn with red Italian corn, in order to make it cultivable also in European temperate climate without losing its properties.
