Broccoli

Il broccolo aumenta il fabbisogno di iodio, quindi, mentre è indicato nell'ipertiroidismo, e sconsigliato se si soffre di ipotiroidismo. La ricchezza in fibre potrebbe creare problemi a chi soffre di gastrite e colon irritabile. La presenza di vitamina K potrebbe interagire negativamente con farmaci anticoagulanti.

In the cosmetics sector, carrot essential oil, combined with carotenes, is also used in the formulation of tanning creams, anti-ageing creams and in products that stimulate hair growth. In addition, the cosmetics industry uses carrot pulp to treat burns, furuncles, dry and chapped skin, and to heal sores.

RICETTE E IDEE IN CUCINA

  • VELLUTATA DI BROCCOLO: frullare il broccolo cotto assieme alla sua acqua di cottura; aggiungere un po' di latte per migliorarne la consistenza e poco parmigiano grattugiato. Servire con olio extravergine di oliva a crudo in dosi controllate;
  • BROCCOLO GRATINATO: lessare il broccolo, disporlo in una teglia apposita, cospargerlo di besciamella fatta con latte, farina, noce moscata (senza aggiunta di grassi da condimento) e qualche cucchiaio di parmigiano ed infornare per 10 minuti a 200 gradi; in alternativa, cospargi i broccoli lessati di pangrattato, timo e maggiorana e inforna!
  • ORECCHIETTE BROCCOLO E ACCIUGHE: tagliare i broccoli a piccoli pezzi e tuffarli nell'acqua bollente poco salata, quando l'acqua torna a bollore, buttare le orecchiette; una volta pronte, scolare il tutto, aggiungere qualche acciuga fatta a filetti, molto peperoncino e un cucchiaio di olio extravergine a persona;
  • POLPETTE DI BROCCOLO: lessare il broccolo, aggiungere uova, pangrattato e qualche cucchiaio di parmigiano; pepare bene; frullare il tutto; formare delle polpette con le mani, passarle nel pangrattato e poi cuocere il forno su carta forno, venti minuti 200 gradi;
  • PURE’ DI BROCCOLO: frullare broccoli e patate lessate al vapore, mescolarli con latte caldo fino ad ottenere la consistenza desiderata: aggiungere un po' di parmigiano se gradito.
Carrots played an important role in ancient times as a remedy to combat gastritis: a puree of raw carrots, drunk slowly, seemed to soothe abdominal pain and counteract the irritation of the gastric mucosa. In the early Middle Ages, carrot roots were considered "miraculous" remedies: the green part was used even then in the treatment of kidney stones. Since ancient times, the carrot has been used to promote tanning and to counteract diarrhoea in childhood.
Although its origins lie in the East, where it has been cultivated for thousands of years, the ancient Greeks and Romans also used carrots, not so much for culinary use (due to the typical hard woody consistency of the plant), but as medicinal plants.

They are diuretic and detoxifying, so they help in cases of cystitis, stones or urinary problems

Beta-carotene and vitamin C have antioxidant properties, useful in fighting free radicals and strengthening the immune system

Vitamin A and beta-carotene are among the vitamins for the eyes, useful for vision, also improving night vision, and in case of cataracts
